The Macallan Launches New Dining Concept TimeSpirit


This year marks the 200th anniversary of The Macallan – undoubtedly one of the most fabled distilleries in Scotland – and this producer has certainly been celebrating with some particularly special announcements this year. Add to those announcements, the launch of a new permanent dining experience, TimeSpirit, which The Macallan has created in collaboration with the Roca Brothers, owners of the three-star Michelin and twice-best restaurant in the world El Celler de Can Roca.

It’s a big moment for both The Macallan – as its next step into the field of gastronomy – and the Roca Brothers — as they open their first dining concept outside of Spain. El Celler de Can Roca has been inspiring diners for over three decades, and while The Macallan is far older both brands share a considerable amount of values. The two brands have now been collaborating for over 12 years, making The Macallan estate the perfect location for the Roca Brothers’ international debut.

The new dining experience at TimeSpirit is a tasting menu comprised of nine dishes, utilizing local ingredients – some from The Macallan Estate itself – to create plates of food that are inspired by Scotland. These dishes are paired with exceptional whiskies and sherries linking both Scotland and Spain throughout the course of the evening or lunch service.

TimeSpirit’s 24-seat dining room was designed by award-winning architect David Thulstrup, who looked to reimagine the space to create the ultimate dining experience in the heart of Macallan’s estate. In the center of the room, diners will find the kitchen, allowing for a clear view of the culinary process. Natural light plunges into the space through vast windows that look out onto the region’s rolling hills.

The Macallan’s cherished single malt whisky is also on full display at the center of the dining room, with exclusive bottles that are found in an oak-paneled cellar space. Of course, as a fine dining restaurant, there is also a superb selection of wine and sherry that has been curated by Josep Roca, the award-winning sommelier from El Celler de Can Roca.

TimeSpirit is located inside The Macallan Estates’ incredible new distillery (new by The Macallan’s standards), which was constructed in 2018 and is a must-see for all whisky lovers. The restaurant is open Thursday through Saturday for lunch and dinner, in addition to Sundays for lunch. The nine-course tasting menu is priced at £60 ($77) for lunch and £95 ($123) for dinner.
